This is purely personal, but I've always liked the opening of High Plains Drifter, with Clint Eastwood suddenly appearing out of the heat-shimmer in the distance. A clever image that leads into the whole "Who or what is this guy?" question that's at the core of the film. Perfectly balanced, of course, by the final scene as he disappears into the heat shimmer.
