Since the primary uses for dogs until the 18th century were as hunters or guards, and since both of these are natural characteristics of wild canines, we can safely hypothesise that it was these useful characteristics that kept them out of our cooking pots. The genetic modification was simply a proicess of mating the best to the best. As to torture and genocide, I am talking about 'natural' humans. Humans who lived as we are evolved to live. Habits such as those are a product of the mass psychosis brought about by our unnatural way of living.
